Hi I'm new to FO and not a programmer.  Forgive me if this has been asked before.

How do I customize the welcome e-mail that is sent when I set up new users?

I would like the email to have info about our organization and less of the FO information.

You can do this in the language files - emails.php.  Depending on the number of languages you use, you will need to change up to 54 files.
